Well, don't know if I could call them as must-see but these are decent or very good movies which many don't know:
Chronicle - nice not known movie with surprisingly good special effects
A Scanner Darkly - Linklater movie with use of interesting technique called rotoscoping or something like that based on Phillip K. Dick book
Abre los ojos - Well, it's basically the same as Vanilla Sky but this is the original, which not many people know about
Strange Days - I just remember this as good movie, but do not exactly remember what is this about but definitely not much known movie :P

also You may try 80s classics like They Live! or The Fly

I'm not a huge fan of other languages as English, as I'm not a fast reader. Except for Japanese anime ofcourse, dubbed is often not that spectacular to watch. Subtitles are sometimes a bit too fast with non-English movies, but maybe Abre los ojos is worth trying :)

Looking at the story, I think my girlfriend will like this.


80's classics can be very nice. 70's also. I really liked Logan's Run.
