This player came out of my YS as a magical GK. He averaged about 3.2 as the training rate. My question is, should I leave him as a GK (selling him cause I don't train them) or given the wide distribution of stas and good talent, waste the "good" GK and train him as a mid or a def?

The probability of injury will be higher on a pitch with poor condition and lower on a pitch with better condition (higher than 50% condition).

Now does that mean it doesn't matter if your pitch condition is 51% or 99% if you want to keep your number of injuries low?
