I also like playing as engineer :p but indeed damn spies destroy my sentres and other things :( not cool
The xBox version has much less content than the PC. For spies, build your sentry facing away from a corner but so a spy cant get behind. Shotgun all 'friendlies' approaching.
Now I'm living longer than my first 2 days of playing this week, my favourit types are: attack: heavy/pyro or medic (support) and in defence I always play engineer. I'm very bad as spy, scout and sniper

Heavy and pyro are pretty powerful, the pyro is much more ambush/close combat though.
Spy is only really for experienced players. You will gain experience on being a spy if you play all other classes, understanding the general movement tactics used by all classes. You will also see typical spy behaviours when playing. (making a beeline for peoples backs in a huge plain, running away from pyros, avoiding running into other teammates (you can walk through teammates))
Scout is a great class as long as you get the first shot off and pick targets well. The high movement speed and closequarters damage allows you take down heavies with ambushes and clever play.
Sniper just comes from experience and practice.

Using a set that disallows your ability to disguise (at the cost of instant disguise on backstabs) and using a watch that can't cloak at will (but fakes my death ^^)
I was pretty disbelieving when that engineer walked in and offered me the backstab, but thats TF2 Public ^^
Watch it and stuff, don't mind my terrible camerawork - it can only get better ^^
Being used to Counter Strike, I always get killed here. I only play snipers, spies and (occasionally) scouts.
I suck :(

If you ever want to improve at those three classes, preferably with voice communication and good English, mail me and I'll add you on steam ^^
Either way, send me mail and I'll run you through basic tactics for all three - Spy/Sniper is my speciality, and I'm not a bad scout. I do have a weakness for meleeing as a Scout, and while beating the Beefy Russian and his medic to death with a fish is hilarious, it fails a lot :(

I love TF2, clocked up 1500 hours =]
Favourite class is Pyro, nothing like setting stuff on fire and reflecting projectiles.

I loved pyro, then got to competition level with him, and realised his only use is to protect the engineer or medic, not actually fight :(
Still, axtinguisher is good fun on public servers :)
I still prefer my newly acquired Strange Bazaar Bargain and Strange YER (I love that knife :P)

Yep at competition level the main use for pyro is to assist the group, still very fun to play on pub indeed.
After hating the Huntsman for so long too I've recently started taking it up and realised how fun it is to play. Played on Badwater the other day and was holding the cart in the tunnel by myself.

I treat the Huntsman users who shoot randomly with disdain.
Otherwise, its not a bad weapon. It works well with the Darwin Shield and also, the taunt kill is very useful. You can stop ubers for 4-5 seconds with it, maybe even killing the medic/patient at the end. ^^
