It probably wouldn't do the mozzarella any good but the consistency was my point, not the temperature.

Actually, if we go down that road, we'll end up having 4 types of cheddar in the semis. Just CHEDDAR then :)

fine by me. i could make other suggestions, but i see its only 1 per user, unless you can make an exeption ;)
We could do that, but with 194 cheeses we'd have to change the format to a knockout competition. This way people will hopefully pick a cheese they have an attachment to.

Hmm well i wonder how many like Abondance, or Tomme des Pyrenees....these are ones i've been enjoying of late.
I can't get by in my life without strong cheddar (at least 5 on the mature scale at supermarkets)...have been enjoying the strength 6 and 7 stuff from M&S lately...mmmm Cornish Cruncher :)
As Cheddar is a whole and not categorised....Manchego :)

I know little about cheeses but can i go for red leicester?

Sparklings, Rose, White, Red, Dessert, Fortified...hmm could be good indeed.
