Manchego is produced in La Mancha and is made only from the whole milk of Manchega sheep. The rich, semi-firm product is aged in natural caves for generally 3 - 6 months, which imparts a zest and exuberant flavor.
Halloumi or haloumi is a Traditional Cypriot cheese, that is also popular in Greece and throughout the Middle East and is now made the world over. It is made from a mixture of goat\'s and sheep milk, although some halloumi can be bought that also contains cow\'s milk. It has a high melting point, and so can easily be fried or grilled.
I always thought Haloumi was a vegeterian cheese, guess I was wrong...
pfft, vegetarian cheese....rennet from non-animal sources is not really cheese anymore i think!
PS. Manchego is awesome...slighty nutty flavour to it and a texture to die for :S
