according to my mentor :) Pace goes to the entire team also.

A player only receives full Pace training if they play a match that week.

Stamina trains everyone on the team whether they play or not.

I would say yes.

Stamina is good for all players and it tends to slide back if not maintained with sporadic training.

same amount for all if they play all 90 minutes, so you could train 22 players in pace in a week. the little mid/att/def doesnt matter with pace even though its still there

For offseason training of stamina, is it worth going out and buying a coach for two weeks to train that?

My primary trainer is a formidible there, is that enough to be effective for offseason stamina training?

The rest of the attributes then (besides Stamina of course) are indeed 'focus' dependent for optimal training.

Only for the head coach.

The Juniors and Assistant coaches only need a high overall rating. Then your main coach should have attributes accordingly.

Here is my main coach:

tragic of stamina, unsatisfactory of keeper
unearthly of pace, unsatisfactory of defender
unearthly of technique, weak of playmaker
unsatisfactory of passing, unearthly of striker

Its obvious that I train strikers.. but since sokker is not like that other online football manager game, your players need to be well rounded and changing training is a must. So instead of buying a new coach every time you decided to change training, just buy a coach that will meet all your training needs.
