A side from using the typical logical attributes like - Am I winning? and, am I taking a lot of shots? What other variables should I be looking at to know that my team is playing well? Thanks,

It depends. If you use only 1 defensive mid, does he have enough pace and stamina to cover the amount of field you want him to cover? How does your tactic match up to other people in your league.
A good thing to note is if your tactics result in your best players having the ball for the largest percentage of time.
Your players with the highest levels of pace and stamina should be asked to cover the most ground, while those with the lowest levels are asked to cover the least.
Your attacker with a good technique skill gets the assignment to dribble past defencers, while the attacker with low technique sets up shop in the box to recieve passes where he can shoot right away.
Those are some examples of things to watch for in your tactic.

what if my goalie and my stiker are best players? should they hold the ball most? :)
Sure, just position all your mids and defenders to the outside of the pitch so the other team kicks it directly to your goalie. Then he can just pass it all the way upfield to your stiker. LOL

REMEMBER that your players mostly stink, because you haven't had the chance to train them up much. The passes will be wild, and they'll be slow.
If you need a mentor, go to the mentor board and ask for one. I could handle another mentee myself.

I agree. I was a total noob to soccer and I could figure out within about five games what was good in my tactics, and what wasn't.

I gave him real advice. Then he asked the question about his striker and goalie, which I assumed was in jest due to the smiley usage, so I replied in jest with an LOL to make sure everyone understood I was being facetious.
i got pretty fast defenders 2 very good, 1 solid. all solid in def.

are they good enough to play high flat defense?
i dont wanna use my starters in friendlys where i try out tactics.

They might be in B-league, it really depends on who you're playing against.
