...the guide says that the last position a player plays during the week is what his position for training is... so the two juniors that play on my a team but don't play the position trained can come in and start the friendly and play for one minute and receive full striker training from the league match for the week??

No. It's based upon time played in the position for the week.

Edit: reiterating.. If you are training Tech on MID and you play your trainee as a DEF in league match then 1 minute as a MID in the friendly, then he will only get 1 minute of MID training.
